Jean Aubron
The producer
Located in Vallet, near Nantes and the Atlantic Coast, Domaine Jean Aubron is headed by fourth-generation vigneron Jean-Pascal Aubron. The estate is dedicated to crafting crisp, bone-dry Muscadet, Folle Blanche, and Sauvignon Blanc. While appellation rules permit up to 3 grams of residual sugar for Muscadet Sur Lie and up to 5 grams for other wines, Jean-Pascal pushes fermentations to completion, yielding zero-residual-sugar wines defined by high acidity, precision, and surprising ageability. Practicing a minimal-intervention cellar approach, he relies on only tiny amounts of SO2 to preserve the wines' natural vitality.
The family's winemaking lineage dates back to 1843, with Jean-Pascal’s great-grandfather working 11 hectares of vines in 1875. Since taking over in 1983, Jean-Pascal has expanded the domaine to 84 hectares—all located within 15 kilometers of the winery to ensure rapid transport, preserving fruit freshness and avoiding heat stress or bruising before pressing. A highlight of the estate is its holdings in the acclaimed Grand Fief de l’Audigère, a historic lieu-dit situated on rare gabbro rock (an ancient volcanic formation) that forces the vines to root deeply, imparting profound minerality to the Melon de Bourgogne grapes.
In the vineyard, Jean-Pascal implemented lutte raisonnée (sustainable farming) in 2000, eliminating harsh chemicals and introducing cover crops between rows to naturally combat mildew caused by Atlantic humidity. A portion of the Grand Fief de l'Audigère parcel is also farmed organically. In the cellar, traditional vinification reigns: fermentations finish in underground glass-lined tanks, where the wines age on their fine lees for 6 to 10 months, developing signature complexity, ethereal lift, and vibrant refreshing power.
